In this match Arsenal played 1-4-3-3 and Nurnberg 1-4-2-3-1. Unfortunately, I did not manage to recognize few players from the German team.
DEFENDING IN MIDDLE ZONE
As you can see in the photo, in the middle zone Arsenal used a 4-4-2 formation with 2 offensive players trying to cut off from the passes the defensive midfielder.
When one of the Arsenal offensive players ran up to the centre-back, the other blocked the defensive midfielder. When the ball was played to the side defender, then winger ran to him.
DEFENDING IN LOW ZONE
In the low zone, the Arsenal team uses all players.
OPENING THE GAME FROM THE GK and building in the mid zone
This is more or less how Arsenal’s game-building scheme looks like. Arsenal try to find a gap in the midfield by playing their players around the lines. When it’s too tight there, they quickly pass the ball to the side zone, where a winger or midfielder runs away. When a midfielder (Vieira or Trossard) make a runs, they look for Saka or Nelson who are trying to get into free space.
This is more or less how Arsenal’s game-building scheme looks like.
When Nelson or Saka runs into the free zone, then Trossard or Vieira runs into the free field.
Of course, the striker role is also important. First of all he must stay with the defenders and often makes a move behind their backs, running to a free field or look for a free space in the mid area and try to progress to build up. This style of play requires a lot of understanding between the players as well as an understanding of the game as a whole.
As you can see in the picture above, Arsenal try to open the game from the goalkeeper in the way I described above. It gives players from north London a lot of free space in the side zones.

As you can see in the picture above, Arsenal press in a 4-1-1-3-1 formation. Partey stays ahead of the defenders. Trossard is left behind 3 offensive players.
